This is a very popular dish in the area made up of endives, romesco sauce and various other types of ingredients. The restaurants that take part in the Xató route (La Ruta del Xató) offer it during the winter time.

On the first Sunday In February, the town of Vendrell celebrates the Xatonada Popular on the main boulevard, where everyone who attends has the opportunity to try this popular local dish.

The Xató recipe(serves 4)

Ingredients for the sauce

  • 100 grams of almonds
  • 80 grams of hazelnuts
  • 1 dried chili pepper, scalded and peeled
  • 1 slice of fried bread
  • half a grain of cayenne pepper (optional)
  • half an onion, roasted
  • 1 head of garlic, roasted
  • 3 vine-ripened tomatoes, roasted
  • olive oil
  • vinegar
  • salt
  • red pepper

Ingredients for the dish

  • 2 curly endives
  • 120 grams of shredded cod
  • 120 grams of tuna
  • 4 anchovy fillets
  • 80 grams of Arbequina olives


Put the salt in a mortar and add the following ingredients one by one, crushing them in this order: first crush the almonds and hazelnuts until you obtain a fine paste, then add the onion, the peeled dried chili pepper, the cayenne pepper, the red pepper and the fried bread. The last step is to add the garlic, tomatoes, olive oil and vinegar.

When the sauce has been made, mix in the washed and drained endives and set aside for a few hours. When the time comes to serve the dish, toss the cod, tuna, anchovy fillets and the Arbequina olives into the sauce. This dish is normally served with a haricot bean omelette.



Coca enramada (savoury pastry) is another typical and exclusive food from El Vendrell. It is made with flour and yeast. Spinach, haricot beans, onion and roasted red pepper are then added and the dish is eaten with sausage or salted sardines. Its origin is very old, like all bread-based dishes, and possibly dates back to the middle ages.


“Fer la rosta” (toasting bread) is an old tradition practised by local farmers. When taking the olives to the mill, they used to take a little time out to toast a slice of bread and use it to soak up the recently pressed oil.

This old custom has been recovered in the Baix Penedès, and the majority of the villages in the region celebrate a popular “rostada” every year. In this celebration everyone can enjoy the extra virgin olive oil, made from Arbequina olives, which are considered to be among the best in the world. It is important to note that this oil comes from the Siurana PDO.

Along with this first oil, it is possible to taste the new wines with the quality of the Penedès DO. These two products are the most representative of the regional agriculture.

At the end of autumn, El Vendrell also celebrates the Festa del Vi i l'Oli (“wine and oil fair”), where everybody can enjoy the “rosta” accompanied by sausages, bacon or salted sardines.



Bufats are exquisite pastries made with hazelnuts, sugar and egg whites. They can found throughout the whole year in El Vendrell.

Its origin goes back from the last century when a local confectioner started making them. Although this dessert is not very old, it has become a very special and renowned delicacy in El Vendrell.

It can be found in nearly all the local cake and bread shops.


This is a typical dessert that is normally eaten during Carnival and Lent. It is a very thin pastry made from flour, eggs, milk, lemon, salt and yeast that is fried and then coated in sugar.

Resoli is a clear brandy liqueur flavoured with anise and cinnamon. It is of Italian origin and is made in various wineries throughout El Vendrell.

It is the perfect drink to accompany the “bufats”.

A group of professionals discovered this excellent dessert made from the fruit of a tree that grows on dry land which is very common in the area, the carob bean, which has a surprising flavour.


Wines and cavas are two of the most important products made in our municipality and in the Baix Penedès region. They are protected by the Penedès DO.

Local wineries and retailers offer a wide selection of wines and cavas made from a careful selection of the vine-stocks from the varieties of this region. White wines and cavas are made with the Macabeo, Xarel•lo, Parellada and Chardonnay varieties, and red wines are made with the Tempranillo, Merlot and Cabernet Sauvignon varieties.

This wide selection of grapes gives the wines and cavas splendidly high quality, richness, balance, aroma and graduation, making them an excellent drink for accompanying the local traditional cuisine.
